		<description>I cook quinoa in water or broth, and then mix it with a can of chickpeas, some frozen veggies (peas, broccoli &amp; cauliflower are my favorite), add a handful of toasted nuts (usually pepitas since they&#039;re cheap and I can get them in the bulk bins), and top with EVOO and kosher salt. Sometimes I&#039;ll do a dressing made of flax oil, tamari and lemon juice instead of EVOO.</description>
