This week, our focus is on fresh, local food. I wrote our meal plan keeping in mind our trip to the farmer’s market on Saturday morning, and our CSA delivery that’s scheduled for Tuesday. Here’s what’s on the table:
Sunday: fresh whole-wheat fettuccini with homemade pasta sauce, steamed peas
Monday: Chicken breasts marinated with TJ’s soyaki, fresh edamame
Tuesday: Taco salad over sweet potatoes
Wednesday: Eggplant parmesan (minus the parmesan), salad
Thursday: Chicken wings with steamed green beans
Friday: Braised beef ribs with steamed veggies
Saturday: Eat out. Happy weekend!
The fettucini, sauce, edamame, beef, sweet potatoes, tomatoes, eggplant, salad greens, and beans are all organic and locally sourced. We’re getting there slowly! I also made 2 loaves of bread and a pan of muffins to use for lunches and breakfasts, plus I have a container of pre-made, frozen green smoothies to take with me this week. We were really able to get ahead this week, it feels great!
