1/2 box pasta
4-6oz shiitake mushrooms, cleaned and roughly chopped
1 T. minced garlic
olive oil
salt
pepper
Parmesan cheese
In a small skillet, heat a generous amount of olive oil (4-6T) until hot. Add garlic and mushrooms, sauteeing until mushrooms are soft and garlic is fragrant. Salt and pepper to taste. Meanwhile, heat a pot of water to a boil and cook pasta according to directions. When pasta is done, drain, top with mushroom mixture, and grate a generous amount of fresh parmesan over the top (shredded works well too). Easy peasy! Enjoy!
