This post is late. Sorry about that! We’ve been having a bear of a time getting Ethan to sleep, and as a result, he’s been staying up until 10pm or later…which is usually when I blog. So things at home have taken priority, and I’m feeling pretty behind. I have a lot of good recipes I want to share with you lately!
Here’s what we’re eating this week:
Sunday: Sausage, bean & kale stew with bread.
Monday: Whole wheat pasta with sauteed shiitake mushrooms, garlic, and parmesan cheese, roasted sweet potatoes and turnips, and green salad.
Tuesday: Roast chicken with roasted sweet potatoes and apples, green salad.
Wednesday: Herb-rubbed chicken, steamed edamame, apple-pear crisp
Thursday: Leftover chicken, green salad, leftover apple-pear crisp
Friday: Chicken pot pie, green salad
Saturday: Leftover chicken pot pie
Ethan and I took a trip to the Farmer’s Market last weekend, so much of what we’re cooking with this week is locally-raised and organic. I love it! The kale, mushrooms, greens, turnips, apples, edamame, and chicken are all farmer’s market finds. We’re also doing really well with October Unprocessed, as we’re halfway through the second week. Our take on the challenge has been to eat clean, rather than eating wholly unprocessed–it’s a vast improvement for us, and we’re undertaking the challenge knowingly.
This week, we finally signed up for our CSA! We’re using Bella Bean Organics, and I just ordered our first week’s basket. It will include lettuce, broccoli, green beans, yellow squash, grape tomatoes, radishes, and bagels. They deliver on Tuesday afternoons…so look for a report next Tuesday!
