We had an exciting weekend at our house this weekend! Ethan turned one, so we had family in town, and hosted his birthday party on Saturday afternoon. We also had family over for dinner on Sunday–both to celebrate Ethan’s birthday and because it was the first night of Rosh Hashanah. Here’s what we’re eating this week:
Sunday: Brisket, roasted sweet potatoes/onions/apples, challah, apples with honey, steamed broccoli.
Tuesday: Brisket, kugel, fresh veggies (carrots and broccoli)
Wednesday: Honey chicken from the freezer, steamed edamame, apples and honey
Thursday: Leftover honey chicken, mashed sweet potatoes, steamed veggies
Friday: Bagel pizzas
Saturday: Eating out. We’re going to have an Outback do-over.
I’m also planning to make another big batch of green smoothies this week for the freezer. They freeze really well, and it’s so easy to thaw a little ziplock of smoothies for a quick afternoon snack. I use them in my lunch as ice packs, and by the time I’m ready to drink one in the afternoon, it’s thawed!
