Meal planning is back at our house! This week is a short week for us–we’re headed to Indiana to see my family and celebrate my mom’s birthday. We leave Wednesday night, so I only needed to plan dinners for Sunday, Monday, and Tuesday this week. A friend sent me a copy of Quick-Fix Vegetarian: Healthy Home-Cooked Meals in 30 Minutes or Less, so I wanted to try a few of the recipes this week. I had planned to try two, but the first made a TON of food (instead of the 4 servings, we could easily eat it for 3 dinners–but since Eric gets tired of things after the second night, I’ll do my best to eat it up for lunches too). So next week I’ll have another new recipe or two to try from the cookbook.
Sunday: Southwestern Pasta Salad with Serrano-Avocado Dressing
Monday: Pasta Salad leftovers
Tuesday: Roast chicken, mashed sweet potatoes, broccoli
