{Recipe} Skinny Roast Chicken

I’ve been following weight watchers online for about seven weeks now, and I love it. I’ve lost 8lbs already, and feel like their new Points Plus system is totally maintainable as a lifestyle. I wanted to share our variation of a delicious Skinnytaste-inspired recipe with you. Here’s the original, and below is our version.

1-3lb whole chicken
1 onion, cut into large pieces
2 peaches, cut into slices
2 garlic cloves, crushed
2-3 T your favorite Italian herbs (we used parsley, oregano and thyme)
1 T olive oil
Salt & Pepper

Rub the chicken with olive oil, then season inside and out with Italian herbs, salt and pepper. Stuff the chicken with onion, garlic, and peaches, along with remaining herbs. Roast at 425 until the thickest part of the thigh reaches 165F, about 50 minutes. Let chicken rest for 10 minutes, then carve. Enjoy!
