In my last post, I told you that we had taco salad earlier this week. It turned out great–here’s how I made it:
20 oz ground turkey, browned
1 large sweet potato, cubed into small pieces and steamed
1 packet taco seasoning
3/4 cup water
cheese (if you eat it)
Combine the turkey and sweet potato in a large skillet over medium heat. Add the taco seasoning and the water, bring to a boil, and then simmer until not liquidy anymore. Meanwhile, chop tomatoes, put salad greens in bowls, and get out the cheese. Top greens with meat mixture, tomatoes, and 1/4 of an avocado. Add cheese if you eat it. The avocado makes this nice and creamy, the greens and tomato cool it down and give it some crunch, and the sweet potato makes it more filling but nutritionally better for you. Enjoy!
