Green Smoothie

I’m working with a nutritionist this week, and she’s having me start my days with green smoothies. I was completely revolted by the idea of drinking what (in my mind) amounted to a blended-up salad for breakfast, especially since I prefer to start my days with pop tarts, sugary cereal, etc. But I thought I’d give it a go since it fits into the food plan for the week (mostly vegan, entirely gluten-free). I took her recipe, cut out some things, added some things, and it’s surprisingly delicious! Here’s my recipe:

2 handfuls baby spinach
2 cups raspberries
1/2 cucumber, cut into chunks
1 scoop vegan protein powder
1 heaping spoonful ground flax seed (I was going to use chia, but can’t find my chia seeds)
1 spoonful goji berries
A few generous shakes of ground ginger
Two shakes ground cayenne
3 T maple syrup (or more/less to taste)
1 c crushed ice
1 c water

Blend until smooth, and enjoy! This makes enough for two large glasses. Guess I’m having it for breakfast and my morning snack!
